The Journey of Delivering Grand Marble into Guests' Hands
To craft each delectable loaf, Grand Marble artisans painstakingly select premium ingredients, knead and ferment dough through precise cycles, and adhere to exacting standards—from manual artistry to advanced machinery. Saigon Horeca serves as the turnkey consultant, designer, and equipment installation partner for the commercial bakery kitchen, spanning raw ingredient prep through finished-product packaging.
Based on the master project layout and standard operating procedures for commercial bakeries, we planned the space into six dedicated functional zones: raw material receiving, sanitation & warewashing, dough mixing & sheeting, baking & pastry production, cold/dry storage, and inspection & packaging.
Equipment Layout & HACCP Workflow
The receiving bay is outfitted with precision weighing scales, sensor hand-wash sinks, insect trap lamps, and a 10m³ walk-in cold room maintained at 2°C to preserve fresh strawberries, oranges, and mangoes in peak condition. Downstream, the Dough Mixing and Sheeting zone serves as the operational heartbeat.
- Heavy-duty Chanmag (Taiwan) spiral mixer and dough sheeter powering the mixing and laminating section.
- High-efficiency Hoshizaki (Japan) reach-in refrigerators and freezers paired with custom SUS304 sinks and wall-mounted shelving.
- 10m³ walk-in chiller maintained at 2°C for receiving and holding fresh fruits and delicate bakery ingredients.
- Six functional zones arranged in a strict HACCP one-way workflow to maximize hygiene compliance and production throughput.
